Delicious mini banana muffins for your healthy little monkeys ;)

Before we talk about these mini banana muffins, let me tell you a bit about how I learnt the truth about bananas. For a period of 3 months right after I started introducing solid to her, Angela was terribly constipated. I always thought that she did not have enough liquid intakes or that might be because of other food that she ate. Not once did I suspect bananas. So I kept giving her unripe bananas (read: light yellow unspotted banana) everyday without knowing that they were unripe. Little did I know that the bananas are ripe only when they are covered in brown spot and they turn a bit darker yellow (I always thought of tossing them in the trash when they start looking like that!). At this stage the starches in bananas are fully developed into sugars so they are easily digested. When I found that out and stopped giving Angela unripe bananas, her constipation was gone without any effort. Many supermarkets, stores or even stands at farmer markets do not sell fully ripe bananas. One of the reasons might be that the ripe bananas do not look that appealing. So next time you buy bananas, make sure to wait a few days until many brown spots appear before consuming them.

Ok, back to mini banana muffins. I buy a bunch of bananas every week so we always have bananas ripening at different stages and ripe bananas are always available in our house. Well this week we have a bit too many ripe bananas available 😀 and by too many I mean like 20 of them. So even after freezing some, putting some in our smoothies I still see some left over. So these beautifully soft mini banana muffins were created. You will be amazed by how soft, fluffy and delicious these mini banana muffins are. In fact I tried two different ways: with and without sugar. If you have some very ripe bananas, you can omit the sugar in this recipe. They will still be sweet enough to satisfy your little ones’ sweet tooth (or yours). Your little folks will be looking forward to snack time even more after tasting one of these banana cups ;).

Mini Banana Muffins

Prep Time: 10 minutes

Yield: 12 muffins


  • • 3 big fully ripe bananas
  • • 1 ½ cup self raising flour
  • • 1 ½ cup whole wheat flour
  • • 2 heaped tbsp. goji berries
  • • 1/3 cup melted coconut oil
  • • 1 tsp. ground cinnamon
  • • 1 tsp. baking powder
  • • 1 tsp. coconut sugar (can be replaced with brown sugar)


  1. Preheat oven to 180 degree C. Line mini muffin pans with mini muffin paper cups or grease your muffin pans if you don’t use paper cups.
  2. Soak goji berries in cold water for 2 minutes.
  3. Chop bananas into small chunks. Transfer to your food processor. Add the soaked goji berries and the rest of the ingredients. Pulse until everything is well combined. If you don’t own a food processor, you can mash the banana and mix it by a wooden spoon with the rest of the ingredients in a mixing bowl until there are no pockets of unmixed flour.
  4. Scoop the batter onto your prepared muffin cups (fill it about ¾ full). Bake for 15 minutes or until a skewer inserted into the middle of a muffin comes out clean.
  5. Keep well in an air tight container up to 3 days. Freeze well up to 3 months (defrost for an hour before rebake for a minute on 200 degree C)
