How on earth is it possible to make ice-cream without those things, you asked. Just with some frozen bananas, fresh fruits and a high speed blender, then you are good to go. The frozen bananas binds the rest of the ingredients together nicely without loosing its taste. Depends on how strong you want the berry flavor to be, you can adjust the amount of berries used in this recipe the way you want. You just have to make sure that you increase the amount of bananas accordingly otherwise the ice-cream will be running. Another cool thing about this berry ice-cream recipe is that if you can’t finish it in one go, you can just leave it in your fridge (not freezer!) and it will turn into a nice smoothie when you come back an hour or two after.

Berries Ice-Cream

Ingredients

  • • 2 chopped frozen ripe bananas
  • • A handful of fresh mixed berries (strawberries and raspberries)
  • • A dash of coconut water or plain water.
  • • 2 tbsp. shredded young coconut meat

Instructions

  1. Add the frozen bananas with coconut water to your blender. Blend on high until very smooth. Add the mixed berries and blend until everything is well-combined and reaches the consistency that you desire.
  2. Topped with shredded young coconut meat or berries. Serve immediately.
  3. This does not refreeze well.
