August is one of the hottest months in some parts of the world; sadly, not here in the Netherlands. We have been experiencing a lot of rain, wind, hail and thunderstorms lately. This grey and somber weather makes me miss sunshine so much that I literally check the weather forecast on my phone every hour to see if the sun will be out soon. It does not seem so, at least not for the next 7 days according to the forecast. Rainy weather also means a lot of indoor activities for Angela and me (luckily she does not seem to mind the gloomy weather at least). I miss the sun so much that I went to whip up some vibrant yellow popsicles. I call them “sunshine pops”. It is just a fancy name for orange kiwi popsicles but it is enough to brighten up my day so why not.
These orange kiwi popsicles are not only beautiful to look at, but they also taste so good. Instead of the watery texture that you normally experience from popsicles, the cream cheese and Greek yoghurt make it so creamy and soft. Plus making this popsicles can be a so much fun activity for your toddler. Juice oranges, chop kiwi into chunks (with a plastic knife of course), towel dry popsicle molds, scoop yoghurt, pour into molds… you name it. Let your toddler help with those tasks and you will get a smile as bright as sunshine in return ;).
